Our History
Serving Brownwood Since 2001
The Sticks BBQ opened in Brownwood, TX in 2001. It started as a straightforward idea: build a barbecue restaurant where everything is made the right way, the food is consistent, and the people who walk in feel like they belong there. More than two decades later, that's still what we do.
We're family owned and operated. The same ownership has run this restaurant since the beginning. We haven't sold to a chain, we haven't franchised, and we haven't handed operations off to a management company. The people who care most about how the food turns out are still the ones making it.
Over the years we've grown to serve not just Brownwood but the surrounding area — Early, Bangs, Coleman, Brady, Comanche, San Saba, Santa Anna, and Rising Star. We cater events all across Brown County and beyond. But the restaurant itself hasn't changed much. Same pit, same recipes, same dining room.
We've watched a lot of restaurants open and close in Central Texas over the past 24 years. The ones that last are the ones that stay honest about what they do. We smoke the meat, we make the sides, and we feed people well. That's the whole plan.

What Sets Us Apart
Smoked every morning, not reheated
Brisket, ribs, sausage, and pulled pork go on the pit every single morning. By the time the doors open, everything has been smoked in-house that day. We don't pre-cook and reheat. When we sell out of a cut, it's gone until the next morning — and that's exactly the point.
The same recipes since day one
The rubs, the sides, the way we trim and smoke the brisket — none of that has changed since 2001. There's no corporate handbook telling us to cut corners or swap ingredients. The recipes are ours and they stay consistent because the same people make the food every day.
Scratch-made sides that actually matter
The sides at most BBQ places are an afterthought. Ours aren't. The mac and cheese, the pinto beans, the coleslaw — everything is made from scratch in our kitchen. We don't use a food service distributor for the stuff that ends up on your plate.
A real dining room, not a food truck
The Sticks BBQ is a sit-down restaurant. You come in, find a seat, order at the counter, and eat. There's room for families, room for large groups, and room for people who just want to eat alone and be left in peace. No reservations, no time limits.

Dine-In
Walk in any day Monday through Saturday. No reservations, no call-ahead required for regular tables. Find a seat, order at the counter, and we'll bring your food out. The dining room fits families, parties, and solo regulars alike.
Takeout
Call ahead and your order will be ready when you arrive. We pack everything for the road — meats, sides, bread, and sauce — so it holds up on the drive home. Takeout is available any day we're open.
Catering
We've catered backyard cookouts, graduation parties, company lunches, funerals, and church events across Brown County and the surrounding area. Call us with your headcount and event date and we'll work out the details. Learn more about BBQ catering — orders are by phone only.
